Hungry Hungry Hash

In Minneapolis, Minnesota the Sassy Spoon is serving up healthy lunches with a side helping of attitude. Best sellers include a hearty Beef Stew with Creamy Cauliflower Mash and a Mixed Vegetable Hash with Shredded Sweet Potato and Chicken Andouille Sausage!




1-2 teaspoons butter
1-2 teaspoons lard
1 cup sweet potato, grated
1/4 cup onion, chopped
1/4 cup green pepper, chopped
1/2 cup broccoli, chopped
salt & pepper to taste
1/2 Andouille sausage, precooked and sliced
1 egg
½ tablespoon butter

Heat a pan and add the butter and lard. Once melted, also add the sweet potato, onion, green pepper, broccoli and salt and pepper. Cook on one side until crispy. Flip onto other side and cook until crispy.

Cook the sausage slices in another pan until crisp and add slices to the pan with the hash.

Fry the egg in butter and put on top of hash to finish dish.
