Steak Sammy

Mosey over to Dallas, Texas where Jack’s Chowhound is wranglin’ up savoury southern style sandwiches such as a slow-cooked Pulled Pork Grilled Cheese with smoked gouda or Spicy Skirt Steak Sliders with fresh pico de gallo.





MARINATED SKIRT STEAK
1/2 cup olive oil
1/4 cup fresh lime juice
1/2 cup pineapple juice
2 tablespoons sea salt
4 scallions, cut in half
2 large cloves of garlic
1 teaspoon red pepper flakes
1 teaspoon cumin
2 teaspoon honey
1.5 pounds skirt steak
Combine all ingredients except for the skirt steak and mix well. Pour marinade over the steak in a large bowl so that it is completely covered. Cover bowl and marinate in the fridge overnight.

PICO DE GALLO
6 Roma tomatoes, diced
1/2 sweet onion, minced
1 bunch fresh cilantro, chopped
4 jalapeno peppers, seeded and minced
2 limes, juiced
1/2 orange, juiced
1 clove garlic, minced
1 teaspoon sea salt
1/2 teaspoon black pepper

Mix all of the ingredients in a bowl and cover. Refrigerate overnight.

THE PLATE
Marinated Skirt Steak (above)
4 sweet Hawaiian mini sub buns, halved and toasted
Spicy mayo to taste
Pico De Gallo (above)
1/2 cup sharp cheddar cheese, grated

Grill the marinated skirt steak and slice it to fit on the bread. Spread spicy mayo on the bun, then add skirt steak, pico de gallo, and cheddar cheese.
