Peanut Butter Bacon Jam Burger

The Act truck is putting on a culinary show of excellence in the streets of Edmonton, Alberta. Here, you can dine on a Peanut Butter Cheese Burger with housemade Maple Bacon Jam or a Cajun Halibut Sandwich with fresh lemon dill coleslaw, all worth a standing ovation.




BACON JAM
1 ½ cups bacon bits
½ a yellow onion
¼ cup maple syrup
1 tablespoon Dijon mustard
1 ½ tablespoons brown sugar
2 tablespoons apple cider vinegar
2 cloves garlic
1 teaspoon pepper
½ teaspoon salt
Place all ingredients in a food processor, and blend until it reaches a smooth consistency with no lumps.

THE PLATE
6 8-ounce beef patties
6 slices cheddar cheese
Bacon Jam (above)
6 Brioche buns, buttered
Mayo to taste
Crunchy peanut butter to taste
6 small handfuls green leaf lettuce
1 tomato, sliced
2 dill pickles, sliced

Cook patties on a grill until they have almost reached your desired level of doneness. While still on the grill, add cheddar cheese and bacon jam, covering the patties for about 20 seconds to melt the cheese.

Toast the buns, then spread mayo on the top half and peanut butter on the bottom half of each. Place the burgers on the buns, followed by a small handful of lettuce, and a few slices of tomato and pickle.
